- Rice
- Beans
- Tomato (fresh/ canned)
- Pepper (dry/ fresh)
- Oil (vegetable/ palm oil)
- Seasoning (Maggi)
- Condiments (curry, thyme, etc)
- Crayfish
- Salt
- Water
- Fish and Meat (optional)
- Onions
How To Cook Jollof Rice And Beans
Wash and cook the fish and meat if using, keep aside when due alongside with its water.
Cook the beans for about 3 to 5 minutes and dispose of the water properly, then rinse the beans with clean water and start cooking again until the beans are a bit soft.
Add the rice in the boiling pot of beans (3 cups of rice to 2 cups of beans) and cook for about 5 to 7 minutes, dispose of the water and rinse the rice and beans with clean water and set aside in a sieve.
Steam the vegetable or palm oil or both.
Add the chopped onions and fry for about 30 seconds to 1 minute.
Add the canned or ground fresh tomato or both and fry for about 5 to 10 minutes (stir from time to time to avoid burning).
Now add the condiments such as curry and thyme and fry for about 2 minutes.
Add the water from the cooked fish and meat, add the Maggi seasoning (2 cubes is okay for 3 cups of rice and 2 cups of beans).
Put the ground crayfish, pepper and salt to taste.
Pour in the rinsed rice and beans into the cooking pot, stir and ensure the water is slightly above the cooking food, but the meat and fish and start cooking until the beans and rice are completely soft.
Keep on topping water when needed and don’t stir until the water dries up, bring down the pot and stir the food thoroughly.
